SPRING SALAD

INGREDIENTS

· Handful of spinach

· Handful of rocket/arugula

· 2 large leafs of radicchio/chicory

· 3 inches of the green part of a scallion/green onion (if low FODMAP) or a whole stalk of scallion

· 2-3 radishes cut into thin slices

· 10-12 pitted green olives

· 1 heaped tablespoon of capers

· 4 sun-dried/semi dried tomatoes

· ½ lemon

· Red wine vinegar

· Sea salt to taste

METHOD

· Thoroughly wash and place spinach, rocket and radicchio in a bowl and cut up with scissors into small pieces (I prefer to do this so it’s easier to eat)

· Chuck in the rest of the ingredients and mix with a salad mixer

· This salad is a great base to have on its own or to have with chosen proteins such as tuna, salmon, sardines or choice of meats for a heartier and more filling meal!
