Lycopene, a carotenoid found in tomatoes, is a powerful antioxidant which has demonstrated to reduce biomarkers of cardiovascular disease, protect against cancer (particularly prostate cancer) and reduce oxidative stress.

Lycopene is fat soluble, which means it is more bioavailable to the body when consumed with fats such as extra virgin olive oil.


•2 medium red peppers/capsicum 

•3 large tomatoes

•Extra virgin olive oil





•Fresh parsley


•Pre-heat oven

•Wash, deseed and cut capsicums in half or quarters 

•Cut the tomatoes in half 

•Chuck the tomatoes & capsicum in a bowl and pour over extra virgin olive oil plus spices and mix until vegetables are well coated 

•Place in oven for 25 mins or until softened 

•Place tomatoes and capsicums in a blender with 1/2-full cup of water and blitz until a soup-like consistency is formed 

•Season with salt & pepper and fresh herb
