REFINED SUGAR FREE AND GLUTEN FREE CACAO AND BUCKWHEAT PANCAKES
INGREDIENTS
1 cup of buckwheat flour
1 banana
1 tablespoon of psyllium husk
1 tablespoon of raw cacao powder
Fruit of choice for toppings
METHOD
Place all ingredients into a blender and buzz until a smooth consistency of pancake batter is achieved
Heat a tablespoon of extra virgin olive oil in a small pan and pour about ¼ cup of pancake batter into the pan and even out the mixture around the pain
Allow to cook and flip after 1-2 minutes
Cook for a further 2 minutes pressing down on the pancake with a spatula to ensure it is cooked well
Top with preferred fruit such as berries, banana, preferred nut butter of choice and raw coconut nectar or rice malt syrup for alternatives to refined sugar
