REFINED SUGAR FREE AND GLUTEN FREE CACAO AND BUCKWHEAT PANCAKES

INGREDIENTS

  • 1 cup of buckwheat flour

  • 1 banana

  • 2 cups of almond milk/oat milk/organic soy milk

  • 1 tablespoon of psyllium husk

  • 1 tablespoon of raw cacao powder

  • Fruit of choice for toppings


METHOD

  • Place all ingredients into a blender and buzz until a smooth consistency of pancake batter is achieved

  • Heat a tablespoon of extra virgin olive oil in a small pan and pour about ¼ cup of pancake batter into the pan and even out the mixture around the pain

  • Allow to cook and flip after 1-2 minutes

  • Cook for a further 2 minutes pressing down on the pancake with a spatula to ensure it is cooked well

  • Top with preferred fruit such as berries, banana, preferred nut butter of choice and raw coconut nectar or rice malt syrup for alternatives to refined sugar
