HEALTHY POTATO SALAD

INGREDIENTS

· 8-10 baby potatoes boiled/steamed and cut into quarters

· ¾ avocado mashed

· 3 tbs Dijon mustard

· 4tbs nutritional yeast

· 4 sprigs of spring onion

· Handful coriander

· ½ fresh squeezed lemon juice

· Salt & pepper to taste



METHOD

· Combine mashed avocado, Dijon mustard & nutritional yeast in a big bowl

· Toss in boiled/steamed potatoes

· Toss in spring onion & coriander

· Add lemon juice, salt & pepper to taste
